"Vallis polis cellae" means the "valley of many cellars" and this is a clear sign that wine making has ancient origins here. Ripasso Valpollicella is procuced by indigenous vines such as Corvine, Corvinone e Rondinella and it is subjected to a double fermentation. Later Ripasso Valpollicella is aged in French oak barrels. During this process the wine becomes more complex, the colour stabilises and the bouquet enriches. It can be sold only after two years from harvesting.
